Nana's Apple Cake Baked Apples

This recipe was inspired by another post I saw on Facebook.  In the original recipe the cook used canned apple pie filling and topped with pie crust.   I thought I could do better than that so here goes.

Ingredients:
Nana's Apple Cake Mix
1 stick melted butter
6 large Granny Smith Apples

Wash your apples and cut in half.

Core the apples using a mellon baller and discard the center.

Add some of the apple that you just carved out to your Nana's Apple Cake and melted butter.

Once you have all the apples cleaned out scoop heaping scoops of the Nana's Apple Cake mixture into each apple half.

Bake apples at 350* for 30 minutes or until your apples are bubbly and brown on the top.

Top with Tastefully Simple Creamy Carmel Sauce.  These are great warm with some vanilla ice cream!!

Ultimate Campfire Potatoes

I wish I could say, "I love camping".  But to be honest, I just don't love it.   I'm sure it would be much better if you were in a camper but every time I have gone I have been in a tent - a large tent, but still a tent.  It gets dirty in there no matter what you do, you never escape the smell of the campfire, and let me just say.....  I like my own bathroom.

But the one thing that I do love is cooking over an open fire.   These potatoes are as easily made over the campfire as they are made on your own backyard grill.

Ingredients:
Potatoes
Tastefully Simple Ultimate Steak Seasoning
Tastefully Simple Roasted Garlic Infused Oil

Slice up your potatoes and add TS Ultimate Steak Seasoning until seasoned to your liking.  Pour in a couple of tablespoons of TS Roasted Garlic Infused Oil.   I double wrap my potatoes in foil.  Place on the grill and turn every 15 minutes or so. You can tell when your potatoes are done by inserting a sharp knife into the package.   If it is soft, it is done.     Slice the package open and serve directly from your "tin foil dish".

Bacon Wrapped Asparagus

I don't know if I will ever make asparagus another way again!

This was so good!   Simply wrap your asparagus tightly with a strip of bacon and fry until the bacon is done.   If you have extra stalks of asparagus that you do not have bacon for, no worries.  Just fry it in the bacon grease.

So delicious!

Spinach & Herb Dip Mix, my dinner savior

I love when I do events and people come up to my table and tell me that I represent "that dip company".   I always laugh and tell them that they can call me the dip lady but if all they ever use Tastefully Simple products for is dips then they are really missing the boat!    I don't know anyone who comes home from work and says, "hey what's for dip tonight".   The question is always, "What's for DINNER."

So today I thought I would show you how you can take a leftover "dip" and use it to make a fantastic quick dinner!!!

Here I have used our Spinach & Herb Dip Mix.   Made according to package with mayo and sour cream. It's great to have in your fridge prepared for the kids when they get home from school and want a snack.  This dip is great on crackers or veggies.  It can even be thinned with milk to make a healthier version of Ranch Dressing. But today it becomes my dinner helper.

I have some fresh broccoli and some left over cooked chicken breast pieces.

Steam the broccoli and arrange in a dish.  Top with cooked chicken.

Looks great already right?

Now grab that left over Spinach & Herb Dip.

Because we love cheese in our house I added a bit of Parmesean Cheese to the dip.  I like the little added flavor that it gives this dish.  You can add cheese if you want to or leave it out, it is good either way.

Top the chicken and broccoli with the Spinach & Herb mixture.

Just pop this into the oven under the broiler until the dish is warm and the dip has browned.

And wal-lah, here is your finished dinner.  Basically it is a one dish meal. Easy, delicious and healthy.

**If you prefer you could also make this dish with left over Onion Onion Dip Mix, or Garlic Garlic.  I have used both of those in the past and they were also delicious!!

Enjoy!!

Beer Bread Shapes

So here is our most popular product, Tastefully Simple's Bountiful Beer Bread.  It's super easy to make all you need is the mix, a beer and 2 tbsp of melted butter.  The cook time will be a little less.  You can tell when the bread is done because it will brown like the picture above and pull away from the side of the pan just a bit.

Normally you would see this bread baked in a loaf pan, but here I baked it in a 9" pie pan.  The reason that I did this is because I wanted to cut the bread up and use it for dips. This way when it is cut each piece has a bit of the crunchy outside.  And it does not crumble as much in your dip.

If you will be using your Bountiful Beer Bread as an appetizer along with a dip you might want to give this a try.
